  Why is that? I mean, if you have a very large plantation it would cost a lot of money, but you'd never loose your harvest again, so in the long run it would be a great investment... Or am I missing something?

You make marshmallows! You cant harvest them...they are not like fruit or vegetables...sugar, cornstarch, flour & so on....come on, you should know better!
